Tonight was a trial run on this:
Tater tot breakfast casserole.
(Yes, the pandemic has hit hard enough that I’m making dinner based on a FB video)

Following the JORBA code
(Pre-ride, re-ride, free ride) this was the pre-ride.
Testing the recipe as intended.

Pretty good, and a dish with great potential.
It’s basically a blank slate like a quiche, you call the combo

Mrs Manic’s first thought: can we make this with French fries?
(I know, she’s a keeper)

This take was with maple sausage (cause it’s what we had), I could definitely see a savory/spicy combo will be the next run.
Chorizo and chiles?

In the meantime, this week we will be just 30 seconds in the science oven away from breakfast.

we made a thing -
i'm not sure what to call it -

sweet chili, onion, pesto, sd tomatoes, garlic, cream, chix base, pignole, added baked chicken breast - served over linguini

could have used add'l pepper, and maybe a shot of paprika.

Following the Eggsagna* (see last post), Mrs Manic decided to throw down on a lasagna.

But of course, first there was a salad

While cooking, taking this thing in and out of the oven terrified me.
I’ll be damned if it was less than 30lbs of molten sauce and mozz and ricotta.

The cookie tray bowed under the weight, and yes I burned myself, but it all made it to the table.

*Bonus round: dessert was an apple crumble (no pics, but was awesome)- the 3 things we cooked this weekend were all in casserole form.

Good segue from above this is called Pasticcio or Greek Lasagne/ baked ziti.

This is my wife’s grandmothers family recipe That’s been used for more generations than that.

If you have an aversion to butter never eat this. If you like butter, Butter, ground beef with cinnamon, salt, pepper, butter, butter, phyllo, Greek pasta noodles, feta cheese and some butter and eggs (9 of them ) then this is for you.

Lot going on on the flame here tonight.
Prepping dinner and a side for a bbq at friends’ tomorrow.

Friends are doing a killer smoke, so I offered to bring jalapeño Mac and cheese.
Then I realized I don’t have a recipe I’ve ever been happy with.
Okay then.

Read 18 jalapeño m/c recipes, and then make shit up.
Start with cooking bacon, then sautéing onion, garlic and jalapeños in some reserved grease.

So far, so good.

Now time to shift gears to make dinner.
Luckily it’s grill fare tonight.

Dinner done, back to the Mac.

Add flour, heavy cream, half and half and then cheese to the sauté

Tomorrow it’ll get a panko topping for the reheat.
I think I got it this time.


Edit: I have a little sauce and bacon left. I’m thinking a small batch with some andouille.

Last night we celebrated my Mother in law moving into her new senior residence independent living apartment with some Filet Mignon (MOther in law requested a nice steak. )

Wife found an 8 pack on sale for like 45 bucks omg this was like candy. We never had this at home before I was so nervous not to overcook them.

I only got the grill shots but this was accompanied by the wife’s special carmelized red onion and garlic mix. Side dish was baked green beans with Parmesian cheese and Also rice pilaf. Washed it down with a Honey brown beer.

sourdough - dutch oven method. Looks like the choice of dutch oven was a bit large,
and I didn't get the lid off early enough. Also gotta work on my scoring game.
