So chickuns came out awesome as always-

A couple hours at 180*, finished on a hot grill with a light baste of BBQ sauce to compliment the rubView attachment 193690

Juicy and tasty as always

Smoked pig shots also came out great, but not on time.
Book time is 45 minutes at 350*, but I had them on a disposable tray in case of leakage, which may have extended cook time.
Add to that the “I’ll bump it to 400* to get this done”, and filling went a little volcano,
only affected aesthetics.
Delicious, and a new party app for sure

Basically the makings for jalapeno poppers

* 8 oz cream cheese softened
* ¼ cup cheddar cheese shredded
* ¼ cup jalapeños diced
* 2 tbsp Sweet Heat by Pitboss or your favorite dry rub

Not enough saturated fat - they need to be deep-fried in lard 😃

Okay, ribs are happening this weekend-
Consensus is the 3-2-1 method?
The purist in me feels like foil is cheating (butcher paper is okay), but just get over myself and do it?

Busy weekend for me over here. Saturday was a planned first attempt at spatchcock chicken, with some ABTs and beans n corn. My cousin commented on the photo with "the look on your face is priceless". Chicken was fantastic, olive oil and Meat Church Voodoo. Sunday was a spur of the moment, rushed rib cook. Not my best work but they were certainly edible. So I tried the 3-2-1 last time and didn’t like it- meat was pretty mush.

Today went with a nekkid pure smoke.
225* for about 6.5, then rested on the counter in foil.

Pellet smoker doesn’t jam out great smoke at that temp, so I supplemented with a smoke tube.
Mfr was coal rolling my meat.
In a good way.
Would have liked a more pronounced smoke ring, but flavor and texture were on point.

Yeah, I think I want to try a modified 3-2–1, 2 hours in foil was too long.
Racks were failing apart when I took them out of the foil.

I was home, unsupervised, like 3 nights in a row 2 weeks ago, so i figured I would reorder some supplies, upgrade/update/splurge a bit. $500 later i decided to put the debit card away. I dont shop online often, but when i do I have impeccable timing. This past Wednesday was youngest child's birthday, take a guess which day every single package arrived on my doorstep? Not my first rodeo, 2 years ago she got a full exhaust system, a new helmet and some new bed linens 🙄 Oh well, we took her out and she laughed about it 😃
