Nothing crazy on this gloomy Sunday, with just the Mrs. and me eating. 1/2 rack of St Louis ribs, slow cooked in the oven and sauced on the grill. Chicken cause 3 ribs is not enough!View attachment 69593

Lots of meat day, since out of commission with poison ivy and can't drink cause Prednisone. Four racks of ribs and 3 pounds of duck gizzards going into the smoker. 5 lbs of flank with membranes intact for Chinese style beef stew with daikon. 7 lbs of pork hock meat for a chorizo bean stew.

Just open top aluminum foil on the gas grill like 300 for 2 hours. Last 30 cranked it up to get some char.

One day I'll get a trager or a green egg. Till then I'll just fake it.
