Yes and no...I'm looking at getting Carbon bars, will going from 780 to 760mm be noticeable? I am looking to keep the same specs.

I did, built a set with Hadley hubs and KOM i29 rims. Still haven't exploded on the Banshee yet. Have to find some picsI've done my wheels for both my vintage bikes, which makes for a whopping total of 4! They're holding up well and are still true, not that I used them that much...

I don't think I can teach a class, but I can tell you that once you get to it it's not that complicated if you take your time. If I had to make money out of it...forget it!
It's paramount to get your spokes cut correctly, I get mine from a guy on ebay (yojimbos_garage) that cuts them to measure. My next evolution will be to buy a Hozan C-702 spoke threader and cut my own spokes.
The best spoke length calculator I've found so far is this https://spokes-calculator.dtswiss.com/en/calculator especially since I tend to use DT Swiss spokes and nipples.
It probably cost me more to build them than buy them already built, the rationale for me is that when I did the first one I needed something to keep me busy and my mind away from very dark thoughts, it worked so I stick to it.
