where does rice fall into the realm of edible food? Potatoes?

if i eat grains that have been smashed, had water and egg added to them, blended and dried. then rehydrated in hot water, I'm not sure that is processed food.

but since i know plenty of people that eat pasta, drink beer, and are not fat, I can conclude that your argument is not universal.

Keto is all or nothing. One beer and you blew it for the week. Get into ketosis and you'll love it. Hardest part for most people is giving up beer.
Hardest for me is other people offering me food. People get really offended when you turn down their food and will try to convince you to have just a little. But that won't work.
I'm actually good on the beer front, I really don't care for it. I'd rather have a martini which is 0 carbs. How far do you go with measuring out carbs/protein? it's supposed to be like 10%/20%/70% right?

And if I get up at 7am have a coffee and ride 3 hours, does that put me immediately into ketosis? One of the things I notice after doing that is I'm not hungry until 2pm so I go almost 20 hours without eating anything.

I keep myself under 20g of carbs per day. Realistically another 10 sneak in because carbs are in everything and it's very hard to avoid them.
One of the things you can do for better success is limit your eating window. Some say 12 hours, but I shoot for 8 when I'm really wanting to lose weight. Unfortunately coffee counts. If you can wake up and ride for 3 hours without food supposedly you'll have great results. Just water, everything else is supposed to trigger your liver. Even black coffee.
On keto, the eating window thing isn't hard. I haven't eaten since lunch yesterday and I'm about now getting hungry (i'm not keto adapted yet, just started this week). If I eat at 10 I can have dinner at 5-6 and maintain my 8 hour window.

Adherence is the single biggest issue with the Keto diet. The other one is knowing whether you are in a state of Ketosis. Ketosis is defined as walking around at .5 millimolers of blood ketones. I use real ketone strips and test my blood for Hydroxybuterate The cheap stripes you pee on only measure Acetoacetate. There is a breathe tester but it's newer technology and a lot of money.

Also, one beer wouldn't kick me out of Ketosis for a whole week. Maybe for the day but it depends on adaptation and proceeding food intake. Someone can be back in Ketosis the next day.

Yeah this is true. But we are discussing in a mountain bike forum where these guys can't go for a bike ride without consuming at least one weird beer. 😉

depends on the person, and what you're reading. But it seems most people can get into ketosis keeping under 20g per day. After achieving some can bring it up higher, but it all depends on the person. I don't feel like testing for ketosis, or testing my willpower so I just keep it low all the time.

so far today coffee, scrambled eggs with cheese, spinach(all in butter) and bacon.

I'm definitely not into daily blood testing so just focusing on the website food charts for now.

yes. i'm not a bonker but the energy levels are quite amazing in ketosis. no crashes, ever. full energy until you pass the F out in bed. I feel like I can't make my max power while cycling, but I can make 85% power for 5 times as long. Probably why tour de france riders don't use it. You can make more power by adding carbs, you just have to get the numbers perfect.

coffee is 0 carbs and in green according to the website.
 
@Blair i jumped started by fasting for 4 days then wasting into eating with a scoop of Almond butter, coconut oil and cinnamon. Sounds crazy but you won't die.

@gtluke if you want a deeper reference I would look into Dom Dagastino's research out of USF. Rhonda Patrick is good stuff but Dom Dagastino is next level.
