I suppose an interesting day-trip would be:
Start at Mauch Chunk Lake county park.
Switchback Railroad trail down to Flagstaff Road.
climb Falgstaff Road to the Flagstaff Ridge trail.
Two options here. The route on Trail Forks I've never done. We always went up to the Flagstaff Club (circled) at the overlook, then rode up the double-track to the tower and then entered single track behind that. It was a flat, rocky trail. Who knows if it's still there:
Take Flagstaff Ridge to Bob's Option. I've only ridden this a couple of times and it was 20 years ago, but it was a pretty rowdy descent at the time, even on my Lawwill DH-6. Bob's Option ends back at the Switchback Railroad trail.
Take the Switchback Trail all the way up to Summit Hill and follow the TF route to the Cemetery Entrance to the Summit Hill Singletrack North.
Right at Summit Hill Double Track to the head of Summit Hill Singletrack Ridgeline. Take that to the Cabin Ridge Trail. Right onto the Pisgah Trail. Pisgah to Switchback.
Here you have two options - back down Switchback to the lake to end or continue NE to the trails towards town and then back down the Switchback trail or all the way into town and then climb back up the road to Switchback and then back to the lake.
For better or worse, a lot of it will be double-track and quite a bit of road climbing, but it's a classic Jim Thorpe route I used to do back in the 90s. Thinking about it, I wouldn't mind trying to do this route again.
