First one is a russulaceae being parasitized by hypomyces lactifluorum (aka lobster mushroom). Second one looks like Dryad's Saddle, but need to see the top as well.
The first 2 photos are too far gone, but I'm gonna guess honey mushrooms. The 3rd photos has 2 different mushrooms: I think stereum ostrea (false turkey-tail) and fomes fomentanrius (tinder fungus)

They are know for killing trees. Did a dead one get cut down in the area?
The sensitivty issue really exists for many many mushrooms. Chicken, morels, etc.. Most people will be fine as long as cooked well.
