This all makes sense, except for the part about having leftover french fries. You lost me there.So I have some leftover brisket from this weekend’s smoke.
Thinking some brisket hash would be pretty good, but we have no potatoes, the grocery store is like 10 minutes away, and snow.

Our bartender at the road house once suggested we take our leftover fries home and put them in eggs the next morning. Now it’s a habit, and we have a nice collection of rando fries in the freezer.
So sautéed onions in a little butter, and also some reserved smoked beef fat.
Yes, you read that correctly.
New smoker’s grease management involves a spout that spills the rendered fat into a bucket.
Considering I reserve bacon fat for cooking, it was a no-brainer this would end up in the freezer.
