Just made some pan seared sirloin. Meh, at best. I split a 1/4 cow of organic grass fed beef with a couple of buddies and all the meat is very tough. I will be sticking with Costco beef in the future.
Bummer to have that much beef you might not be happy with, but if you have local farms that do by the piece, keep trying.

We tried a bunch near us, and only two are worthy of my grill.
But those two? Welcome to my freezer any time.

Fettuccini with pancetta, brussel sprouts onion and garlic, tossed with parm and pecorino. not my best effort, but tasty nonetheless.

next time, I’ll add some heavy cream.

Making me second guess my choice of pellet grill over a kamado.
Please don’t say anything.
It won’t help.

But technique- reverse sear?
No reverse sear on these. I’ve been saving that for really thick steaks. This was T Rex method. super popular on the Egghead forums.
