Cant teach an old dog new tricks... I can say this because @jklett is 1 yr? older than me :p
The way to unlearn it is to practice unclipping or taking foot off in different situations, flat, front wheel up on something, front wheel lower than rear, etc. over and over and over.

And loosen them all the way to the lowest spring setting. Also, if running SPD's consider the SH-56 "multi release" cleat. I've never used it, I use the standard SH-51 but understand the SH-56 to release more easily in more directions.
 
Exactly....so I vote shimano because....biking products.....and some damn good fishing reels.
