Another fav of mine is left over bourbon slow cooked shredded pork and white rice in a provolone cheese omelet
And bacon.Forgot to mention to add avacado as well to this

We usually do 1 cup white rice, 1.25 water. 12 minutes. I think i need to tune it a little more but just not sure what.
I do the same as you - 12 minutes in the Instapot. I've eaten 4 cups of white basmati per day 90% of the time for over a year and a half. 2 cups a pop for 2 meals a day eating 2600-3000 calories per day. My glucose barely moves anymore. I'm sure you'll be fine. I douse it with EVOO for the extra fat intake too mmmmmmm.
