Who likes to smoke their meat?

i'm about 6 hours in on a 6.5 pound pork butt. Monitoring temp, i usually pull off at 190 and rest before shredding. Anyone do anything different?
 
not a big butt, thinking 8/9 hrs?
my 10lb butts usually take 12-14
are you foil wrapping, if so, when and how long

I used to probe my meats, but have more fun trying to maintain ambient temps and smoke/moisture along with time
doesn't always come out perfect, but let's me fiddle around more, if I didn't enjoy the process so much, I'd just get a Traeger and set n' go
 
anyone know where I can source some Camphor wood for smoking?
seems hard to find around there, but popular in Asia
I can get Camphor oil in Indian stores, but that's it
if not too heavy, will bring some home from China this summer

if it doesn't fall apart when taking it off the smoker, put it back on....or drop it in a crock pot for a couple hours with some bbq sauce or crushed tomatoes and beef stock - until it really just comes apart....
 
I usually pull it off when it hits 190, wrap in foil and an old towel and toss it in a cooler to rest for maybe an hour.
Then go Wolverine on it.

image.jpg Some may find gizzards nasty, smoking a few pounds of duck gizzards, will taste like lean beef jerky when sliced. Hard to find fresh in nj, pick them up in Chinatown of course. image.jpg
 
Had smoked duck breast today - didn't do it myself tho. it was good - hinted at a smoked ham...

I may smoke some burgers tomorrow - and some fish....strange, but true.

in preparation for the jets/giants driveway tailgate, the pork shoulder is going on now. will pull it off about 11:00 and
put it in a crock pot overnight on warm. then shred it up for sammies for the gametime. just a salt/pepper/paprika/onion powder rub
this time around. Apple wood smoke. probably add some apple cider to the crock pot. Also rockin a ham soup.

If you are cycling by(or in the area), stop in. 1-4 or so.

The head and body are applewood. After Christmas, Rudolph is headed for the smoker.
 
First smoke ever today-my neighbor gave me his Brinkmanns Smoke n Grill . I did some modifications- installed some vents and a hole for a real thermometer , not the one that came on the side of the smoker. Bought some apple wood chips and am using the recommended lump coals- Cowboy coals is the brand I believe . Tough to get keep thing up to temp with the pork butt on it , but once I did seems to be maintaining pretty good after 2 hours in . Updates to come .....
