Better late than never I guess. I took pics with plans to post them and then went into a tryptophan coma and forgot

Small bird 13.5 lbs only the 5 of us plus my mother in law this year Who doesn’t eat turkey

We tried a dry sweet bourbon rub this year and it came out delicious.

So I have some leftover brisket from this weekend’s smoke.
Thinking some brisket hash would be pretty good, but we have no potatoes, the grocery store is like 10 minutes away, and snow.

I remember our cache of French fries in the freezer.

Our bartender at the road house once suggested we take our leftover fries home and put them in eggs the next morning. Now it’s a habit, and we have a nice collection of rando fries in the freezer.

So sautéed onions in a little butter, and also some reserved smoked beef fat.
Yes, you read that correctly.
New smoker’s grease management involves a spout that spills the rendered fat into a bucket.
Considering I reserve bacon fat for cooking, it was a no-brainer this would end up in the freezer.

I do this all the time in the rare occasion this happens at home. This isn’t “right now” but this was last weekend after one of my rides. Bonus left over sweet potato fries.

Stirred up the fries with a little olive oil and added salt pepper garlic salt bacon bits and cheddar jack. We also had some leftover peasant bread which I toasted up nice and crispy.

Man that was good.

I kept hearing about reverse seared steaks so I figured I would try it.
Dry brined them over night with whiskey and hickory smoked salt, and black pepper.
Using the internal thermometer I put them in the oven at 270 until mine reached 105, then slapped it on the grill for about 2-3 minutes each side. I've never had a juicier steak and absolutely perfect for how I like my steaks.

Some really good mushrooms, asparagus and filet. I am more of a fan of a ribeye or sirloin, but the kids liove a filet. I have to admit, pretty damn good!!!
