Riding in the happiest place in the world

I'd be real hesitant to do any road rides in FL, notorious for very bad drivers.

probably 3/4 of the drivers are not even Florida residents, they are all tourists, so the dad's are getting distracted by the 5 kids crying why they didnt get the souvenir X or went to Magic Kingdom instead of Universal, or tommy pulled my hair, etc.....
 
If you head up a little north toward the Apopka area, the trails might not be too bad. There are some "hills" there.
 
I've heard some good things about the ocala trails. It was in Mountain Bike action a few months ago. It looks like its about 1 hour from orlando.

+1 on the Ocala trails. The Santos/Vortex trails are just south of Ocala, about an hour and fifteen minutes from Orlando. They have everything from beginner to expert trails, although there is not really any climbing. The Vortex trail is a ton of fun though. There are two bike shops down there right by the trailhead that rent bikes. I rented from these guys:

You won't get any great bikes from either place, but the Giant Rincon they rented me was in perfect working order. I asked them to put spd pedals on for me and they did for no extra charge.

The other place is called Greenway Bicycles. I don't know anything about them, but I think they just opened last year.
